IMG_2134Oven Roasted Garlic Lemon Chicken

This meal can be made for your family or friends in one sitting or just yourself leaving delicious leftovers. It’s a hearty and healthy dish that is easy to make with little prep time.


3 sweet potatoes chopped

¾ lbs Green beans

2 Lemons

3 cloves garlic minced

2 large chicken breasts cut in half

Couple tablespoons of coconut oil melted

Tablespoon garlic salt

Tablespoon pepper


  • Preheat oven to 450 degrees, Spray large oven pan with olive oil, Spread green beans on bottom of pan, Place chopped sweet potatoes around outside of pan, Dress the chicken breasts in the coconut oil/lemon juice mixture and apply garlic salt and pepper once placed on inside of the pan, Add the minced garlic to the dish and pour the remaining lemon-garlic mixture on.
  • Place pan in the oven and set a timer for 50 minutes. After timer, remove chicken and return the green beans and sweet potatoes in the oven for another 10 minutes or until sweet potatoes are tender and fully cooked. You are ready to serve!
